have a mineral content of 30%. - Organic potatoes washed immediately after harvest (3 months after harvest).

have a mineral content of 5%. - Organic potatoes washed immediately after harvest, packed in plastic bags and treated with chemicals to prevent sprouting (3 months after harvest).

have a mineral content of 1%.
For comparison, 50 years ago:

have a mineral content of 40%.
For comparison, 100 years ago:
